Almond Flour Ginger Cookies

Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- Combine almond flour, ground ginger, salt, and baking soda in a bowl and mix well.
- Add melted coconut oil, maple syrup, and blackstrap molasses to the dry ingredients and mix until a thick batter forms.
- Scoop the batter by rounded tablespoons and roll into balls.
- If desired, roll the balls in coconut sugar.
- Arrange the balls on the prepared baking sheet and flatten them to about ½-inch thick.
- Bake for 10 to 12 minutes until lightly puffed.
- Let the cookies cool completely on the pan before serving.
