Ingredients

The cookie dough

  • 1 ½ cups almond flour
  • 2 teaspoons ground ginger
  • teaspoon fine sea salt
  • ¼ teaspoon baking soda
  • 2 tablespoons melted coconut oil
  • ¼ cup pure maple syrup
  • 1 tablespoon blackstrap molasses

For rolling

  • 2 to 3 tablespoons coconut sugar

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. Combine almond flour, ground ginger, salt, and baking soda in a bowl and mix well.
  3. Add melted coconut oil, maple syrup, and blackstrap molasses to the dry ingredients and mix until a thick batter forms.
  4. Scoop the batter by rounded tablespoons and roll into balls.
  5. If desired, roll the balls in coconut sugar.
  6. Arrange the balls on the prepared baking sheet and flatten them to about ½-inch thick.
  7. Bake for 10 to 12 minutes until lightly puffed.
  8. Let the cookies cool completely on the pan before serving.
