Healthy Chewy Ginger Molasses Cookies

Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a large bowl, whisk together the almond flour, oat flour, coconut sugar, ginger, cinnamon, baking soda, and salt.
- Add the coconut oil, molasses, vanilla extract, and almond milk, and cream together until the dough forms moist crumbles.
- Use a cookie scoop to form balls of dough, about 2 tablespoons each, and roll each ball in cane sugar.
- Place the balls on the cookie sheet and lightly flatten them with the back of a drinking glass.
- Bake for 11-12 minutes, then let the cookies cool for 10 minutes before enjoying.
