Healthy Chewy Ginger Molasses Cookies

Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a small bowl, mix the flaxmeal and warm water, and set aside.
- In a large bowl, combine oats, almond flour, coconut sugar, cornstarch, baking powder, baking soda, salt, cinnamon, ginger, and allspice.
- Once the flaxmeal mixture thickens (after about 10 minutes), add it along with molasses and oil to the dry ingredients and mix until combined.
- Scoop out a little less than ¼ cup of dough for each cookie, roll into a ball, and flatten slightly.
- Place the cookies on the baking sheet about 2 inches apart.
- Bake for 11-14 minutes until the edges are firm but the center is slightly squishy.
- Let the cookies cool on the tray for about 10 minutes, then transfer to a wire rack to cool completely.
- Enjoy immediately or store in an airtight container in the fridge for up to a week.
