Healthy Chewy Ginger Molasses Cookies

Ingredients

  • 2 Tbsp flaxmeal
  • 3 Tbsp water, warm
  • cup old fashioned rolled oats
  • ½ cup almond flour
  • ¼ cup coconut sugar (or brown sugar)
  • 2 Tbsp cornstarch
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp allspice
  • cup molasses
  • ¼ cup oil

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a small bowl, mix the flaxmeal and warm water, and set aside.
  3. In a large bowl, combine oats, almond flour, coconut sugar, cornstarch, baking powder, baking soda, salt, cinnamon, ginger, and allspice.
  4. Once the flaxmeal mixture thickens (after about 10 minutes), add it along with molasses and oil to the dry ingredients and mix until combined.
  5. Scoop out a little less than ¼ cup of dough for each cookie, roll into a ball, and flatten slightly.
  6. Place the cookies on the baking sheet about 2 inches apart.
  7. Bake for 11-14 minutes until the edges are firm but the center is slightly squishy.
  8. Let the cookies cool on the tray for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Enjoy immediately or store in an airtight container in the fridge for up to a week.
