Ingredients

The dough

  • cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • 1 teaspoon baking soda
  • 2 tablespoons ground ginger

The wet ingredients

  • ½ cup grapeseed oil or palm shortening
  • ¼ cup yacon syrup
  • ½ cup agave nectar or honey
  • 1 tablespoon lemon zest

Instructions

  1. 1. Combine almond flour, salt, baking soda, and ginger in a large bowl.
  2. 2. In a medium bowl, mix together grapeseed oil, yacon syrup, agave nectar, and lemon zest.
  3. 3. Mix the wet ingredients into the dry ingredients until combined.
  4. 4. Scoop 1 tablespoon of dough onto a parchment paper lined baking sheet.
  5. 5. Bake at 350°F for 7-10 minutes until the tops start to crack.
  6. 6. Cool the cookies and serve.
