Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, mix the almond flour, arrowroot starch, coconut oil, maple syrup, vanilla, baking powder, almond extract, and salt until a thick, slightly sticky dough forms.
- Chill the dough in the freezer for 30 minutes or in the refrigerator for 1 hour.
- Scoop the dough onto the prepared baking sheet and flatten slightly.
- Bake for 8 to 10 minutes until the cookies puff up; adjust the time for desired softness.
- Let the cookies cool on the pan for 15 minutes before transferring to a wire rack.
- Decorate as desired and store in an airtight container.
