Ingredients

  • 1 ½ cups blanched almond flour
  • ¼ cup arrowroot starch
  • 1 tablespoon melted coconut oil
  • 5 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ½ teaspoon almond extract
  • teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a large bowl, mix the almond flour, arrowroot starch, coconut oil, maple syrup, vanilla, baking powder, almond extract, and salt until a thick, slightly sticky dough forms.
  3. Chill the dough in the freezer for 30 minutes or in the refrigerator for 1 hour.
  4. Scoop the dough onto the prepared baking sheet and flatten slightly.
  5. Bake for 8 to 10 minutes until the cookies puff up; adjust the time for desired softness.
  6. Let the cookies cool on the pan for 15 minutes before transferring to a wire rack.
  7. Decorate as desired and store in an airtight container.
