Ingredients

The cookie dough

  • 1 ¼ cups blanched fine almond flour
  • ½ teaspoon baking soda
  • ⅓–½ cup maple syrup or honey
  • ¼ cup creamy no stir nut butter
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon coarse sea salt
  • cup vegan chocolate chips or mix-ins of choice

Optional coating

  • to taste raw sugar or baking stevia

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond flour, baking soda, maple syrup, and nut butter until combined.
  3. Add sea salt and any desired mix-ins, then chill the batter for 30 minutes if preferred.
  4. Scoop the dough into balls and roll in sugar if desired.
  5. Flatten the dough balls slightly and place them on the baking sheet.
  6. Bake for 9-12 minutes until edges are golden.
  7. Allow to cool completely before serving.
