Lower Sugar Almond Flour Chocolate Chip Cookies

Ingredients

  • 1 ¼ cups super fine blanched almond flour
  • ¼ cup coconut flour
  • ¼ tsp kosher salt
  • ¼ tsp baking soda
  • 1 tsp pure vanilla extract
  • 1 large egg
  • ¼ cup brown sugar, packed
  • 2 tbsp granulated sugar (or turbinado sugar)
  • 6 tbsp butter, melted
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Melt the butter and let it cool slightly.
  3. In a mixing bowl, whisk together the almond flour, coconut flour, salt, and baking soda.
  4. Add the vanilla, egg, brown sugar, white sugar, and melted butter to the dry ingredients and mix until combined.
  5. Fold in the chocolate chips.
  6. Scoop the dough into balls and place them on the baking sheet, flattening them slightly.
  7. Bake for about 12 minutes or until golden around the edges.
  8. Allow to cool before enjoying.
