Ingredients

  • 1 cup almond butter
  • ¾ cup coconut sugar or brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 180C/350F.
  2. 2. In a large bowl, mix almond butter and coconut sugar until well combined.
  3. 3. Add baking soda, salt, egg, and vanilla extract to the mixture and mix well.
  4. 4. Fold in the chocolate chips.
  5. 5. Scoop out 12 balls of cookie dough and place them on a lined baking sheet, ensuring they are two inches apart.
  6. 6. Bake for 10-12 minutes or until the edges are golden.
  7. 7. Allow the cookies to cool completely on the baking sheet.
