Ingredients

  • ¾ cup coconut sugar
  • ½ cup cacao powder
  • 1 tsp baking soda
  • 1 cup almond butter
  • 2 large eggs
  • 2 tsp vanilla extract

Instructions

  1. 1. Preheat the oven to 350°F and line a cookie sheet with parchment paper or a silpat mat.
  2. 2. In a large mixing bowl, combine coconut sugar, cacao powder, and baking soda, mixing well to remove lumps.
  3. 3. Add almond butter, eggs, and vanilla extract, stirring until the mixture is thick and well combined.
  4. 4. Fold in the chocolate chips.
  5. 5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them out to allow for spreading.
  6. 6. Bake for 10 minutes or until the cookies are fragrant and set.
