Ingredients

The dough

  • 1 cup almond butter
  • ¾ cup coconut sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup chocolate chips
  • ½ cup chopped almonds

For sprinkling

  • to taste sea salt

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a large bowl, mix together the almond butter and coconut sugar.
  3. 3. Add the egg and mix until combined.
  4. 4. Stir in the vanilla, baking soda, and salt.
  5. 5. Add the chocolate chips and chopped almonds, mixing until fully combined.
  6. 6. Chill the dough in the refrigerator for at least 30 minutes.
  7. 7. Scoop the dough into 2 tablespoon balls and place them on a parchment-lined baking sheet, pressing down slightly.
  8. 8. Sprinkle with sea salt.
  9. 9. Bake for 12-14 minutes until they look soft but will set as they cool.
  10. 10. Allow to cool completely before enjoying.
