Instructions
- Preheat the oven to 350°F (177°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk the egg until beaten, then mix in the almond butter, brown sugar, baking soda, and vanilla until well combined.
- Fold in the chocolate chips until evenly distributed.
- Scoop about 1.5 tablespoons of dough onto the prepared baking sheets and slightly press down on each mound.
- Bake for 10 minutes, until soft. For crispier cookies, bake for up to 12 minutes.
- Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
