Ingredients

  • 1 large egg
  • 1 cup almond butter or peanut butter
  • ½ cup light or dark brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon pure vanilla extract (optional)
  • 1 cup semi-sweet or dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk the egg until beaten, then mix in the almond butter, brown sugar, baking soda, and vanilla until well combined.
  3. Fold in the chocolate chips until evenly distributed.
  4. Scoop about 1.5 tablespoons of dough onto the prepared baking sheets and slightly press down on each mound.
  5. Bake for 10 minutes, until soft. For crispier cookies, bake for up to 12 minutes.
  6. Allow the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
