Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the egg (or flax egg), coconut oil, sugar, almond butter, and vanilla until well combined.
- Add the almond flour, baking soda, and salt, mixing until combined. If too dry, add 1 to 2 tablespoons of water.
- Fold in the chocolate chips.
- Scoop the dough onto the baking sheet using a cookie scoop, pressing each ball down slightly and sprinkling with flaky sea salt if desired.
- Bake for 11-14 minutes, until the edges start to brown.
- Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
