Ingredients

Wet Ingredients

  • 1 unit egg or flax egg
  • 2 tablespoons coconut oil
  • ½ cup coconut sugar or packed brown sugar
  • ¼ cup almond butter
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup semisweet chocolate chips
  • to taste unit flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the egg (or flax egg), coconut oil, sugar, almond butter, and vanilla until well combined.
  3. Add the almond flour, baking soda, and salt, mixing until combined. If too dry, add 1 to 2 tablespoons of water.
  4. Fold in the chocolate chips.
  5. Scoop the dough onto the baking sheet using a cookie scoop, pressing each ball down slightly and sprinkling with flaky sea salt if desired.
  6. Bake for 11-14 minutes, until the edges start to brown.
  7. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
