Flourless Double Chocolate Cookies

Instructions
- Preheat the oven to 350°F.
- In a large bowl, whisk together the egg and coconut sugar.
- Stir in the peanut butter and vanilla extract.
- Add the cocoa powder, baking soda, and salt, and stir until fully combined.
- Stir in the chocolate chips.
- Using about two tablespoons of dough, roll into balls and place on a parchment-lined baking sheet.
- Add more chocolate chips on top of the dough balls if desired.
- Bake for 10-12 minutes.
- Let cool for 10 minutes before removing from the pan.
