Instructions
- Preheat the oven to 350°F (177°C) and line two large baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk the egg until beaten, then mix in the peanut butter, brown sugar, baking soda, and cocoa powder until well combined.
- Add the vanilla extract and fold in the peanut butter chips until evenly distributed.
- Scoop out about 1.5 tablespoons of dough onto the prepared baking sheets, pressing down gently on each mound.
- Bake for 9-10 minutes, allowing the cookies to remain soft in the center.
- Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.
