Flourless Peanut Butter Cookies

Instructions
- Preheat the oven to 350°F.
- Beat the peanut butter and brown sugar until smooth.
- Add the egg, vanilla, baking soda, and salt, and mix for about a minute.
- Shape the dough into balls and roll in sugar if desired.
- Flatten the balls with a fork or the bottom of a glass.
- If using, mix in chocolate chips and oats at this stage.
- Bake for 8-9 minutes, being careful not to over-bake.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack.
