Ingredients

  • 1 large egg
  • cup brown sugar packed
  • ¼ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup creamy or crunchy peanut butter
  • ½ cup dark chocolate chips or peanut butter chips (optional)

Instructions

  1. Whisk together the egg, brown sugar, granulated sugar, vanilla, baking soda, and salt in a medium bowl.
  2. Stir in the peanut butter until the dough is smooth and well combined.
  3. Add chocolate chips if using, and distribute evenly.
  4. Chill the dough for at least 30 minutes.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Scoop the dough onto the baking sheet, leaving space between each cookie.
  7. Flatten the cookies slightly if desired.
  8. Bake for 7 to 8 minutes until crinkled on top but soft in the center.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
