Instructions
- Whisk together the egg, brown sugar, granulated sugar, vanilla, baking soda, and salt in a medium bowl.
- Stir in the peanut butter until the dough is smooth and well combined.
- Add chocolate chips if using, and distribute evenly.
- Chill the dough for at least 30 minutes.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Scoop the dough onto the baking sheet, leaving space between each cookie.
- Flatten the cookies slightly if desired.
- Bake for 7 to 8 minutes until crinkled on top but soft in the center.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
