Ingredients

  • 1 cup all-natural almond butter (no salt or oil added)
  • ¾ cup coconut sugar
  • 1 large egg (or flax egg)
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • to taste coarse sea salt (optional topping)

Instructions

  1. Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the almond butter, coconut sugar, egg, baking soda, and salt, stirring until the mixture is thick and uniform.
  3. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Flatten each mound of dough with a fork, creating a criss-cross pattern, and sprinkle with coarse sea salt if desired.
  5. Bake for 10 to 12 minutes, until the tops puff up and the edges are lightly golden brown.
  6. Let the cookies cool on the pan for 10 minutes before transferring them to a wire rack to cool completely.
