Instructions
- Preheat the oven to 350ºF and line a large baking sheet with parchment paper.
- In a large bowl, combine the almond butter, coconut sugar, egg, baking soda, and salt, stirring until the mixture is thick and uniform.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each mound of dough with a fork, creating a criss-cross pattern, and sprinkle with coarse sea salt if desired.
- Bake for 10 to 12 minutes, until the tops puff up and the edges are lightly golden brown.
- Let the cookies cool on the pan for 10 minutes before transferring them to a wire rack to cool completely.
