Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, combine the softened butter and coconut sugar, mixing until smooth.
- Add the egg and vanilla extract, and mix again.
- Incorporate the salt, baking soda, and almond flour, stirring until a thick batter forms.
- Fold in the chocolate chips.
- Scoop the dough onto the lined baking sheet using a tablespoon or cookie scoop.
- Bake for 9 to 12 minutes until the edges are lightly golden.
- Let the cookies cool on the pan for 10 to 15 minutes before transferring to a wire rack.
