Panera Broccoli Cheddar Soup

Ingredients

  • 2 tablespoons butter
  • ½ medium white onion, diced
  • 4 cups broccoli, finely chopped
  • 1 teaspoon garlic powder
  • 5.5 cups chicken broth
  • 1 cup matchstick carrots, roughly chopped
  • 1.5 teaspoons salt, separated
  • ½ teaspoon ground black pepper
  • ½ cup all-purpose flour
  • 1 cup 2% milk
  • 4 cups shredded cheddar cheese, preferably freshly grated

Instructions

  1. 1. Heat a large stock pot or Dutch oven over medium/high heat and add butter.
  2. 2. Once melted, add the onion and ¼ teaspoon of salt, cooking for 3-4 minutes.
  3. 3. Add the broccoli, garlic powder, and another ¼ teaspoon of salt, sautéing for 2-3 minutes.
  4. 4. Pour in the broth and bring to a boil, then reduce heat to low and set aside 1 cup of broth.
  5. 5. Add the carrots, black pepper, and remaining salt to the pot, stirring and letting it simmer.
  6. 6. Whisk the flour into the reserved broth in a medium bowl until thickened, then pour it back into the pot.
  7. 7. Add the milk and whisk, then let the soup simmer for 4-5 minutes.
  8. 8. Remove from heat and slowly stir in the shredded cheese until fully melted and incorporated.
  9. 9. Let the soup simmer over low heat until thickened to desired consistency.
