Panera Broccoli Cheddar Soup

Instructions
- 1. Heat a large stock pot or Dutch oven over medium/high heat and add butter.
- 2. Once melted, add the onion and ¼ teaspoon of salt, cooking for 3-4 minutes.
- 3. Add the broccoli, garlic powder, and another ¼ teaspoon of salt, sautéing for 2-3 minutes.
- 4. Pour in the broth and bring to a boil, then reduce heat to low and set aside 1 cup of broth.
- 5. Add the carrots, black pepper, and remaining salt to the pot, stirring and letting it simmer.
- 6. Whisk the flour into the reserved broth in a medium bowl until thickened, then pour it back into the pot.
- 7. Add the milk and whisk, then let the soup simmer for 4-5 minutes.
- 8. Remove from heat and slowly stir in the shredded cheese until fully melted and incorporated.
- 9. Let the soup simmer over low heat until thickened to desired consistency.
