Ingredients

The soup base

  • 2 tablespoons butter
  • 1 cup chopped onions
  • 2-3 cloves garlic
  • 2 cups chicken stock or broth
  • 4 cups chopped fresh broccoli florets
  • salt and pepper to taste

The thickening ingredients

  • ¼ cup all-purpose flour
  • 2 cups heavy cream
  • 2 cups sharp shredded cheddar cheese

Instructions

  1. 1. Set the Instant Pot to sauté and melt 1 tablespoon of butter, then add onions and garlic, cooking until translucent.
  2. 2. Add chicken broth, broccoli, salt, and pepper to the pot and stir.
  3. 3. Seal the lid and cook on high pressure for 4 minutes.
  4. 4. Quick release the steam and switch back to sauté mode.
  5. 5. Stir in heavy cream and shredded cheddar cheese.
  6. 6. Mix melted butter with flour in a bowl, then add a couple of tablespoons of soup to this mixture and return it to the pot to thicken.
  7. 7. Cook on sauté until the cheese melts, then serve.
