Ingredients

The base

  • 2 tablespoons butter
  • 1 medium white or yellow onion
  • 2 stalks celery
  • 1 medium carrot
  • 1 teaspoon minced garlic
  • 1 teaspoon smoked paprika

The soup

  • 1 pound broccoli
  • 4 cups chicken broth
  • 6 ounces cream cheese
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 cup half and half
  • 8 ounces shredded cheddar cheese

Instructions

  1. Melt the butter in a saucepan or using the sauté function of your slow cooker.
  2. Add the diced onion, celery, and shredded carrot, and cook for 8 minutes.
  3. Add minced garlic and smoked paprika, cooking for an additional 30 seconds.
  4. Transfer the mixture to your slow cooker.
  5. Add chopped broccoli, chicken broth, diced cream cheese, salt, and pepper to the slow cooker.
  6. Stir everything together and cover with a lid.
  7. Cook on low for 4 hours.
  8. Use an immersion blender to puree the soup to your desired consistency.
  9. Stir in half and half and shredded cheddar cheese, and cook for another 30 minutes.
  10. Serve warm with your favorite toppings.
