Crockpot Broccoli Cheese Soup

Instructions
- Melt the butter in a saucepan or using the sauté function of your slow cooker.
- Add the diced onion, celery, and shredded carrot, and cook for 8 minutes.
- Add minced garlic and smoked paprika, cooking for an additional 30 seconds.
- Transfer the mixture to your slow cooker.
- Add chopped broccoli, chicken broth, diced cream cheese, salt, and pepper to the slow cooker.
- Stir everything together and cover with a lid.
- Cook on low for 4 hours.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in half and half and shredded cheddar cheese, and cook for another 30 minutes.
- Serve warm with your favorite toppings.
