Ingredients

The soup base

  • 5 cups fresh broccoli florets
  • cup chopped onions
  • cup chopped celery
  • cup chopped carrots
  • 2-3 cloves garlic, minced
  • 4 cups broth

The creamy mixture

  • 1 cup half and half
  • 2 cups shredded cheddar cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Add broccoli, onions, celery, carrots, broth, and garlic to the slow cooker.
  2. Cook on High for 2-3 hours or Low for 4-6 hours until the vegetables are tender.
  3. If desired, blend the soup until smooth using an immersion blender.
  4. Add cheddar cheese, half and half, salt, and pepper to the soup.
  5. Stir and cover, cooking on High for an additional 30 minutes until the cheese melts.
