Ingredients

The soup base

  • 1/3 cup butter
  • 1 1/2 cups chopped yellow onion
  • 2 cloves garlic
  • 6 Tbsp all-purpose flour
  • to taste salt
  • to taste black pepper
  • 2 cans (12 oz) evaporated milk
  • 5 cups low-sodium chicken broth
  • 5 cups small diced broccoli florets
  • 1/8 tsp dried thyme

The creamy finish

  • 1/2 cup heavy cream
  • 12 oz sharp cheddar cheese
  • 2 oz parmesan cheese

Instructions

  1. Melt butter in a skillet and sauté onions until softened.
  2. Add garlic and flour, then cook while stirring for 2 minutes.
  3. Slowly whisk in evaporated milk until smooth and thickened.
  4. Transfer the mixture to a slow cooker with chicken broth, diced broccoli, and thyme.
  5. Cover and cook on low for 5 to 6 hours.
  6. Stir in heavy cream, cheddar, and parmesan cheese until blended.
  7. Season with salt and pepper to taste and serve warm.
