Broccoli Cheese Soup

Ingredients

The soup base

  • 6 Tbsp butter
  • 1 cup finely chopped yellow onion
  • 1 large clove garlic
  • ¼ cup all-purpose flour
  • 3 ¼ cups low-fat milk
  • 1 (14.5 oz) can low-sodium chicken broth
  • ½ cup heavy cream
  • 3 cups finely chopped fresh broccoli florets

The cheese

  • 10 oz sharp cheddar cheese
  • 1 oz finely shredded Parmesan cheese

Seasoning

  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Melt butter in a pot over medium-high heat and cook the onions until nearly soft.
  2. Add garlic and flour, cooking for about 1 minute while stirring constantly.
  3. Slowly whisk in milk and chicken broth, then stir in the broccoli.
  4. Cook while stirring until the mixture begins to thicken.
  5. Reduce heat to low and cook until the broccoli is tender, about 6-8 minutes.
  6. Remove from heat and stir in heavy cream, cheddar, and Parmesan until melted.
  7. Season with salt and pepper to taste, and serve warm.
