Instructions
- Preheat the oven to 350°F.
- Slice the tops off the peppers and remove the seeds and ribs.
- Place the peppers cut side down in a baking dish with 1½ cups of water.
- Cover with foil and bake for 30 minutes.
- In a pan, heat olive oil and cook ground beef with salt and pepper until browned.
- Add onion and cook until soft, then add garlic and cook for another 30 seconds.
- Stir in rice, tomato sauce, diced tomatoes, and Italian seasoning, then mix in ¾ cup of cheese.
- Drain the water from the peppers, flip them over, and fill with the meat mixture.
- Sprinkle remaining cheese on top, cover with foil, and bake for 20 minutes.
- Uncover and bake for another 10 minutes until cheese is melted and peppers are tender.
- Sprinkle with parsley, let stand for 5 minutes, then serve.
