Stuffed Green Peppers

Ingredients

The peppers

  • 6 pieces green bell peppers

The filling

  • 1 tablespoon olive oil
  • 1 ½ pounds ground beef
  • 1 ¼ teaspoons kosher salt
  • ½ teaspoon black pepper
  • cup yellow onion
  • 1 tablespoon garlic
  • 1 ½ cups long grain white rice
  • 8 ounces tomato sauce
  • 14 ½ ounces petite diced tomatoes
  • ½ teaspoon dried Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons parsley

Instructions

  1. Preheat the oven to 350°F.
  2. Slice the tops off the peppers and remove the seeds and ribs.
  3. Place the peppers cut side down in a baking dish with 1½ cups of water.
  4. Cover with foil and bake for 30 minutes.
  5. In a pan, heat olive oil and cook ground beef with salt and pepper until browned.
  6. Add onion and cook until soft, then add garlic and cook for another 30 seconds.
  7. Stir in rice, tomato sauce, diced tomatoes, and Italian seasoning, then mix in ¾ cup of cheese.
  8. Drain the water from the peppers, flip them over, and fill with the meat mixture.
  9. Sprinkle remaining cheese on top, cover with foil, and bake for 20 minutes.
  10. Uncover and bake for another 10 minutes until cheese is melted and peppers are tender.
  11. Sprinkle with parsley, let stand for 5 minutes, then serve.
