Instructions
- Preheat the oven to 180C/375F and prepare a baking dish.
- Cut the bell peppers in half and remove the seeds, then place them in the baking dish.
- In a pan, heat oil and sauté the chopped onion until fragrant.
- Add the ground beef and cook until browned, then add taco seasoning and canned tomatoes, simmering briefly.
- Remove from heat and stir in the cooked rice and half of the shredded cheese.
- Fill the bell peppers with the beef mixture and top with the remaining cheese.
- Bake for 20-25 minutes until the cheese is melted and the peppers are tender.
