Ingredients

The peppers

  • 4 large bell peppers

The filling

  • 1 tablespoon olive oil
  • 1 small onion
  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning
  • 15 ounces canned tomatoes
  • 1 cup cooked rice
  • 2 cups shredded cheese

Instructions

  1. Preheat the oven to 180C/375F and prepare a baking dish.
  2. Cut the bell peppers in half and remove the seeds, then place them in the baking dish.
  3. In a pan, heat oil and sauté the chopped onion until fragrant.
  4. Add the ground beef and cook until browned, then add taco seasoning and canned tomatoes, simmering briefly.
  5. Remove from heat and stir in the cooked rice and half of the shredded cheese.
  6. Fill the bell peppers with the beef mixture and top with the remaining cheese.
  7. Bake for 20-25 minutes until the cheese is melted and the peppers are tender.
