Easy Stuffed Peppers

Ingredients

The peppers

  • 6 large bell peppers

The filling

  • 2 tablespoons avocado oil
  • ½ cup uncooked long-grain white rice
  • 1 lb. ground beef
  • 1.25 teaspoons salt
  • 1 cup corn
  • ¼ medium white onion
  • 1 15 oz. canned pinto beans
  • 1 15 oz. canned tomato sauce
  • ½ teaspoon paprika
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ cup shredded Monterey jack cheese

Instructions

  1. Preheat the oven to 350ºF and prepare the bell peppers in a baking dish.
  2. Drizzle the peppers with oil and season with salt, then bake for 10-15 minutes.
  3. Rinse the rice and cook it in a saucepan with water until done.
  4. Cook the ground beef in a skillet until almost fully cooked, then set aside.
  5. Sauté the onion in the skillet, then add corn and cook until browned.
  6. Add the beans, tomato sauce, and seasonings to the corn mixture, then mix in the beef and rice.
  7. Stuff each pepper with the filling and top with cheese.
  8. Bake the stuffed peppers for 15-20 minutes until the cheese is melted.
