Watermelon Mojito

Ingredients

  • ¾ lb. seedless watermelon cubes
  • ¼ cup lime juice
  • 1 teaspoon honey or agave nectar
  • 15–20 leaves fresh mint
  • 1.5 oz. white rum
  • to taste none sparkling water
  • as needed none ice cubes

Instructions

  1. Blend the watermelon cubes until smooth to achieve a juice consistency.
  2. If the juice is pulpy, strain it through a mesh strainer.
  3. In a mason jar or glass, combine the watermelon juice, lime juice, and optional sweetener.
  4. Muddle the mint leaves in 2-3 tall glasses until darker and slightly wilted.
  5. Fill each glass 3/4 full with ice and divide the watermelon mixture among the glasses.
  6. Add white rum to each glass or substitute with sparkling water for a mocktail.
  7. Top off each glass with a splash of sparkling water, stir, and enjoy.
