Watermelon Mojito

Instructions
- Blend the watermelon cubes until smooth to achieve a juice consistency.
- If the juice is pulpy, strain it through a mesh strainer.
- In a mason jar or glass, combine the watermelon juice, lime juice, and optional sweetener.
- Muddle the mint leaves in 2-3 tall glasses until darker and slightly wilted.
- Fill each glass 3/4 full with ice and divide the watermelon mixture among the glasses.
- Add white rum to each glass or substitute with sparkling water for a mocktail.
- Top off each glass with a splash of sparkling water, stir, and enjoy.
