Watermelon Mojitos

watermelon (about 4 lbs, seeds removed and cut into chunks)

freshly squeezed lime juice

simple syrup
Instructions
- Blend the watermelon chunks until smooth.
- Pour the pureed watermelon into a large pitcher and add lime juice and muddled mint leaves, then stir.
- Add the white rum and stir vigorously for about 15 to 30 seconds.
- Taste and add simple syrup based on the sweetness of the watermelon, then stir again.
- Pour into ice-filled glasses and enjoy.
