Watermelon Mojitos

Ingredients

  • ½ medium size watermelon (about 4 lbs, seeds removed and cut into chunks)
  • cup freshly squeezed lime juice
  • ¾ to 1 cup white rum
  • 20-30 leaves fresh mint (muddled)
  • ½ cup simple syrup

Instructions

  1. Blend the watermelon chunks until smooth.
  2. Pour the pureed watermelon into a large pitcher and add lime juice and muddled mint leaves, then stir.
  3. Add the white rum and stir vigorously for about 15 to 30 seconds.
  4. Taste and add simple syrup based on the sweetness of the watermelon, then stir again.
  5. Pour into ice-filled glasses and enjoy.
