Instructions
- Heat oil in a large frying pan and brown the cubed pork loin.
- Chop the onion and garlic, then process with the canned chilies until it resembles a thick paste.
- Add spices to the browned pork and stir until fragrant.
- Pour the pureed chilies and their juice over the pork.
- Add water and stir, ensuring not to add salt at this stage.
- Cover and simmer on low heat for 1 to 1½ hours until the pork is tender.
- Adjust seasonings before serving.
- Serve over cauliflower rice or zoodles, and top with a fried or poached egg if desired.
