Ingredients

The stew

  • 2 pounds pork loin (cubed)
  • 2 teaspoons ground cumin
  • 2 teaspoons granulated garlic
  • 1 teaspoon pure ground chile powder (optional)
  • 2 ounces onion (about ½ cup, chopped)
  • 2 cloves garlic
  • 1 can whole Hatch green chilies and liquid (27 ounce can)
  • 3 tablespoons oil
  • 2 cups water

Optional toppings

  • as needed fried or poached eggs

Instructions

  1. Heat oil in a large frying pan and brown the cubed pork loin.
  2. Chop the onion and garlic, then process with the canned chilies until it resembles a thick paste.
  3. Add spices to the browned pork and stir until fragrant.
  4. Pour the pureed chilies and their juice over the pork.
  5. Add water and stir, ensuring not to add salt at this stage.
  6. Cover and simmer on low heat for 1 to 1½ hours until the pork is tender.
  7. Adjust seasonings before serving.
  8. Serve over cauliflower rice or zoodles, and top with a fried or poached egg if desired.
