Slow Cooker Pork and Green Chili Stew

Ingredients

  • 2 lbs pork tenderloin
  • to taste salt and pepper
  • 2 tbsp unbleached all-purpose flour
  • ¾ cup diced onion
  • 2 cans (4.25 oz each) whole green chiles, sliced
  • 2 tbsp chopped jalapeño
  • 10 oz can diced tomatoes and green chilies
  • ½ cup fat-free low-sodium chicken broth
  • 1 tbsp cumin
  • ½ tsp garlic powder

Instructions

  1. Cut the pork into 2-inch pieces and season with salt and pepper.
  2. Heat a large non-stick skillet, spray with cooking oil, and brown the pork on all sides for about 3-4 minutes.
  3. Sprinkle 1 tbsp of flour over the pork and cook for 30 seconds, then add the remaining flour and cook for another 30 seconds.
  4. Transfer the browned pork to the crock pot and add the remaining ingredients.
  5. Cook on LOW for 6 to 8 hours or HIGH for 4 hours.
  6. Adjust salt and pepper to taste before serving.
