Cinnamon Sweet Potato Chickpea Salad

Instructions
- Preheat the oven to 425°F and prepare a baking sheet.
- Peel and chop the sweet potato into ½ inch pieces.
- In a large bowl, combine the cooked chickpeas, chopped sweet potato, chopped onion, cinnamon, sea salt, and ½ tbsp of coconut oil.
- Mix the ingredients well and spread them onto the prepared baking sheet.
- Bake in the oven for 36-40 minutes.
- Remove from the oven and transfer to a large bowl.
- Add the remaining ½ tbsp of coconut oil and stir to coat the salad.
- Adjust seasoning with additional sea salt if desired and serve immediately.
