Cinnamon Sweet Potato Chickpea Salad

Ingredients

  • 1 large sweet potato
  • 1.5 cups cooked chickpeas
  • 1 small onion
  • ½ tsp cinnamon
  • ½ tsp sea salt
  • 1 tbsp coconut oil

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet.
  2. Peel and chop the sweet potato into ½ inch pieces.
  3. In a large bowl, combine the cooked chickpeas, chopped sweet potato, chopped onion, cinnamon, sea salt, and ½ tbsp of coconut oil.
  4. Mix the ingredients well and spread them onto the prepared baking sheet.
  5. Bake in the oven for 36-40 minutes.
  6. Remove from the oven and transfer to a large bowl.
  7. Add the remaining ½ tbsp of coconut oil and stir to coat the salad.
  8. Adjust seasoning with additional sea salt if desired and serve immediately.
