Instructions
- Cook the bacon in a saucepan until crispy, then drain on paper towels.
- In the same pan, add butter and onions, cooking until tender. Add garlic and cook until fragrant.
- Stir in flour and cook for 1-2 minutes.
- Add potatoes, chicken broth, milk, smoked paprika, and salt. Bring to a boil and cook undisturbed for 15 minutes.
- Blend the soup until smooth, then stir in heavy cream, sour cream, and black pepper. Adjust seasoning to taste.
- Let the soup simmer for about 10 minutes before serving.
- Serve hot with toppings of cheddar cheese, green onions, and crispy bacon.
