Small Batch Loaded Potato Soup

Ingredients

The soup base

  • 2 strips Thick Cut Bacon
  • 1 tbsp Unsalted Butter
  • ½ cup chopped Onion
  • 2 cloves Garlic
  • 2 tbsp All-Purpose Flour
  • 1 pound Small Gold Potatoes
  • 2 cups Good Chicken Broth
  • 1 cup Whole Milk
  • ¼ tsp Smoked Paprika
  • Salt to taste
  • Black Pepper to taste
  • ¼ cup Heavy Cream
  • 2 tbsp Sour Cream

For garnish

  • Cheddar Cheese
  • Green Onions

Instructions

  1. Cook the bacon in a saucepan until crispy, then drain on paper towels.
  2. In the same pan, add butter and onions, cooking until tender. Add garlic and cook until fragrant.
  3. Stir in flour and cook for 1-2 minutes.
  4. Add potatoes, chicken broth, milk, smoked paprika, and salt. Bring to a boil and cook undisturbed for 15 minutes.
  5. Blend the soup until smooth, then stir in heavy cream, sour cream, and black pepper. Adjust seasoning to taste.
  6. Let the soup simmer for about 10 minutes before serving.
  7. Serve hot with toppings of cheddar cheese, green onions, and crispy bacon.
