Ingredients

The soup base

  • 4 strips bacon
  • 3 tablespoons butter
  • 1 cup onion
  • 1 clove garlic
  • 2 tablespoons all-purpose flour
  • 2 ½ cups chicken broth
  • 2 cups milk
  • 2 lbs Yukon gold potatoes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1-2 cups water
  • ½ cup heavy cream

Optional garnishes

  • to taste sour cream
  • to taste cheddar cheese
  • to taste crispy bacon

Instructions

  1. Cook the bacon and butter in a pot over medium heat until the bacon is crispy.
  2. Add chopped onion and cook until tender, then add garlic and cook briefly.
  3. Stir in flour to create a roux and cook for a few minutes.
  4. Gradually whisk in chicken broth and bring to a light boil.
  5. Add milk, diced potatoes, salt, and pepper, then bring to a boil and reduce heat.
  6. Simmer until potatoes are fork tender, adding water as needed.
  7. Remove half of the potatoes, add heavy cream, and puree the soup.
  8. Return potato chunks to the pot, adjust seasoning, and serve hot with garnishes.
