Instructions
- Cook the bacon and butter in a pot over medium heat until the bacon is crispy.
- Add chopped onion and cook until tender, then add garlic and cook briefly.
- Stir in flour to create a roux and cook for a few minutes.
- Gradually whisk in chicken broth and bring to a light boil.
- Add milk, diced potatoes, salt, and pepper, then bring to a boil and reduce heat.
- Simmer until potatoes are fork tender, adding water as needed.
- Remove half of the potatoes, add heavy cream, and puree the soup.
- Return potato chunks to the pot, adjust seasoning, and serve hot with garnishes.
