Ingredients

The soup

  • 6 slices bacon
  • 2 pounds russet potatoes, cubed
  • 3 cups half-and-half
  • 6 pieces green onions, whites and greens separated

Optional seasonings

  • to taste salt
  • to taste pepper
  • to taste cheese
  • to taste sour cream

Instructions

  1. Cook the bacon in a large pot until crispy, then transfer to a paper towel to drain excess oil.
  2. In the same pot, sauté the white parts of the green onions until fragrant.
  3. Add the cubed potatoes and water, cooking for 5 minutes while stirring occasionally.
  4. Stir in the half-and-half, salt, and pepper, and bring to a gentle boil until the potatoes are fork-tender.
  5. Use an immersion blender to blend the soup until smooth and creamy.
  6. Serve in bowls and top with crispy bacon, sour cream, and cheese.
