Instructions
- Combine pasta, crushed tomatoes, olive oil, lemon zest, garlic, and salt in a large skillet or saucepan.
- Pour 4 cups of boiling water over the mixture, cover, and bring to a boil.
- Uncover and simmer until the pasta is al dente, stirring regularly, about 6-10 minutes.
- Stir in the cooked lentils and chopped kale, allowing the kale to wilt.
- Finish with saffron and cook until the liquid is mostly absorbed.
- Serve topped with tahini, almonds, olives, and any other desired toppings.
