  • 1 pound dried pasta
  • 1 14-ounce can crushed tomatoes
  • 2 tablespoons extra virgin olive oil
  • Zest of 2 lemons
  • 3 cloves garlic
  • 1 teaspoon fine grain sea salt
  • 1 cup cooked lentils
  • 1 pound kale
  • pinch saffron

Toppings

  • to serve tahini
  • to serve torn basil
  • to serve Parmesan
  • to serve olives
  • to serve toasted almonds

Instructions

  1. Combine pasta, crushed tomatoes, olive oil, lemon zest, garlic, and salt in a large skillet or saucepan.
  2. Pour 4 cups of boiling water over the mixture, cover, and bring to a boil.
  3. Uncover and simmer until the pasta is al dente, stirring regularly, about 6-10 minutes.
  4. Stir in the cooked lentils and chopped kale, allowing the kale to wilt.
  5. Finish with saffron and cook until the liquid is mostly absorbed.
  6. Serve topped with tahini, almonds, olives, and any other desired toppings.
