Instructions
- Add all ingredients except lemon juice into a wide, deep pot.
- Bring the pot to a boil, then simmer on low for about 30 minutes with the lid on.
- Monitor the pasta as it cooks, adding extra water if necessary to avoid burning.
- Before serving, add lemon juice and more spinach or kale.
