Greek Style One Pot Vegetarian Pasta

Ingredients

The pasta

  • 300 g spaghetti
  • 3 cups water

The vegetables

  • 1 small red onion, chopped or sliced
  • 1 ½ - 2 cups grated zucchini
  • ½ cup kale or spinach, chopped
  • 1 tomato salted and cubed
  • cup cherry tomatoes
  • cup marinated artichokes, chopped
  • cup sundried tomatoes, chopped
  • 3 large garlic cloves, pressed

The flavorings

  • 1 tbsp olive oil
  • cup parmesan cheese of choice
  • 1 tbsp Better Than Bouillon Vegetable Stock Paste
  • 2 tbsp nutritional yeast
  • ½ tsp sea salt
  • ½ tsp fresh black pepper
  • ½ tsp red pepper chili flakes
  • 200 mL coconut milk
  • 3 tbsp lemon juice

Instructions

  1. Add all ingredients except lemon juice into a wide, deep pot.
  2. Bring the pot to a boil, then simmer on low for about 30 minutes with the lid on.
  3. Monitor the pasta as it cooks, adding extra water if necessary to avoid burning.
  4. Before serving, add lemon juice and more spinach or kale.
