Copycat Panera Shells and Cheese

Ingredients

The pasta

  • 8 ounces Pasta Shells

The sauce

  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1 cup 2% Milk
  • 1 cup Sharp Cheddar, Grated
  • 1 cup Gouda, Grated
  • 2 tbsp Reduced Fat Cream Cheese

Instructions

  1. Boil the pasta according to package instructions, then drain and set aside.
  2. In the same pot, melt the butter over medium-low heat.
  3. Add the flour to the melted butter and stir for 1 minute.
  4. Pour in the milk and stir over low heat until the sauce thickens.
  5. Add a pinch of salt and pepper to the sauce.
  6. Remove the sauce from heat to prevent it from breaking.
  7. Stir in the cheese and allow it to melt slowly, adding milk if needed for a smooth consistency.
  8. Add the cooked pasta to the cheese sauce and mix well.
  9. Taste and adjust seasoning with salt and pepper as desired.
