Easy Dumpling Soup

Instructions
- Heat oil in a soup pot over medium heat.
- Add minced garlic, black garlic, ginger, and lemongrass; sauté for 3-5 minutes until softened.
- Add chopped yellow squash and cook for another 3-5 minutes.
- Incorporate frozen dumplings and stir well.
- Pour in vegetable stock and tamari, bring to a simmer, and cook for 5-7 minutes until dumplings are done.
- Stir in spinach and remove from heat.
- Serve in bowls garnished with sliced green onion and dehydrated garlic if desired.
