Easy Dumpling Soup

Ingredients

The soup base

  • 2 tbsp oil of choice
  • 2 cloves garlic, minced
  • 2 cloves black garlic, minced
  • 1 inch ginger, minced
  • 2 inch lemongrass, minced
  • 1 cup yellow squash, chopped
  • 10-12 pieces frozen vegetable dumplings
  • 3-4 cups vegetable stock
  • 2 tbsp tamari
  • 1 cup spinach

Garnish

  • 2 pieces green onions, sliced thin
  • to taste dehydrated garlic (optional)

Instructions

  1. Heat oil in a soup pot over medium heat.
  2. Add minced garlic, black garlic, ginger, and lemongrass; sauté for 3-5 minutes until softened.
  3. Add chopped yellow squash and cook for another 3-5 minutes.
  4. Incorporate frozen dumplings and stir well.
  5. Pour in vegetable stock and tamari, bring to a simmer, and cook for 5-7 minutes until dumplings are done.
  6. Stir in spinach and remove from heat.
  7. Serve in bowls garnished with sliced green onion and dehydrated garlic if desired.
