Ingredients

The dumplings

  • 2 cups white whole wheat flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons butter
  • 1 cup milk

The soup

  • 8 cups chicken broth (or water/broth combo)
  • cups shredded carrots

Instructions

  1. Mix the flour, baking powder, and salt to make the dough.
  2. Heat the butter and milk in a small saucepan until the butter melts, then combine with the dry ingredients.
  3. In a large pot, bring the broth to a boil, then reduce to medium heat and add 1 cup of carrots.
  4. Form ½-inch balls of dough and add them to the pot.
  5. Simmer uncovered for 8 to 10 minutes until the broth thickens.
  6. Divide the soup into bowls and sprinkle with the remaining carrots.
