Instructions
- Prepare the Spreadable Vegan Mexican Cheese if using.
- Lay one tortilla flat and spread with half of the cheese.
- Top with refried beans, avocado, onion, tomato or salsa, and cilantro.
- Flatten the ingredients down to make rolling easier.
- Tightly roll the tortilla from one end to the other, placing seam side down.
- Use a serrated knife to slice the roll into ½-inch slices.
- Repeat with the second tortilla and remaining ingredients.
- Serve immediately or refrigerate for up to 2-3 days.
