Ingredients

  • 2 large vegan flour tortillas
  • cup Spreadable Vegan Mexican Cheese
  • cup vegan refried beans
  • ½ medium ripe avocado
  • ½ cup red onion
  • ½ cup finely diced tomato or chunky salsa
  • ½ cup fresh cilantro

Instructions

  1. Prepare the Spreadable Vegan Mexican Cheese if using.
  2. Lay one tortilla flat and spread with half of the cheese.
  3. Top with refried beans, avocado, onion, tomato or salsa, and cilantro.
  4. Flatten the ingredients down to make rolling easier.
  5. Tightly roll the tortilla from one end to the other, placing seam side down.
  6. Use a serrated knife to slice the roll into ½-inch slices.
  7. Repeat with the second tortilla and remaining ingredients.
  8. Serve immediately or refrigerate for up to 2-3 days.
