Ingredients

The pinwheels

  • 4 large spinach or regular tortillas
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 cup canned black beans, drained and rinsed
  • 1 cup finely chopped bell peppers (red, orange, and/or yellow)
  • ΒΌ cup finely chopped cilantro

For garnish

  • more black beans
  • more bell pepper
  • optional cilantro

Instructions

  1. Mix cream cheese, cheddar cheese, and chili powder in a bowl.
  2. Spread the cheese mixture over each tortilla.
  3. Sprinkle black beans and bell pepper at one end of each tortilla.
  4. Roll the tortillas tightly and secure with a dab of cream cheese if needed.
  5. Slice the rolled tortillas into pinwheels.
  6. Serve immediately or refrigerate for up to 8 hours before serving, garnished with cilantro, black beans, and bell pepper.
