Instructions
- Preheat the oven according to the cake mix box instructions.
- Line a cupcake pan with 24 liners or lightly coat with cooking spray.
- Zest the lemon and lime, setting the zest aside.
- Juice half of the lemon and half of the lime into a large bowl.
- Add the cake mix, soda, egg whites, and half of the zest to the bowl and mix until combined.
- Pour the batter into the cupcake liners, filling each about 2/3 full.
- Bake according to the cake mix box instructions and let cool completely.
- Juice the remaining lemon and lime halves and mix with the remaining zest, cream cheese, and powdered sugar until smooth to make the frosting.
- Frost the cooled cupcakes with the cream cheese mixture.
