Ingredients

The cupcakes

  • 1 box yellow cake mix
  • 1 can diet lemon-lime soda
  • 2 large egg whites
  • 1 whole lemon
  • 1 whole lime

The frosting

  • 8 oz 1/3 less fat cream cheese
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven according to the cake mix box instructions.
  2. Line a cupcake pan with 24 liners or lightly coat with cooking spray.
  3. Zest the lemon and lime, setting the zest aside.
  4. Juice half of the lemon and half of the lime into a large bowl.
  5. Add the cake mix, soda, egg whites, and half of the zest to the bowl and mix until combined.
  6. Pour the batter into the cupcake liners, filling each about 2/3 full.
  7. Bake according to the cake mix box instructions and let cool completely.
  8. Juice the remaining lemon and lime halves and mix with the remaining zest, cream cheese, and powdered sugar until smooth to make the frosting.
  9. Frost the cooled cupcakes with the cream cheese mixture.
