Ingredients

The cupcakes

  • 1 box yellow or white cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup sour cream
  • ½ teaspoon vanilla extract
  • 2 teaspoons coconut extract
  • 1 medium lime zest
  • 1 cup sweetened coconut flakes

The frosting

  • 3 8-ounce packages full-fat cream cheese
  • ¾ cup butter
  • 3 cups powdered sugar
  • 1 medium lime juice
  • 2 teaspoons coconut extract

Garnish

  • to taste sweetened coconut
  • to taste lime zest

Instructions

  1. Preheat the oven to 350°F and line two 12-cup muffin tins with cupcake liners.
  2. In a large bowl, combine all the cupcake ingredients except for the coconut and mix on low for 30 seconds, then on high for 3 minutes.
  3. Add the coconut flakes and mix until just combined.
  4. Distribute the batter evenly among the cupcake liners.
  5. Bake for 16-22 minutes until lightly golden and a toothpick comes out clean.
  6. Allow the cupcakes to cool completely.
  7. For the frosting, beat the cream cheese and butter until fluffy, then add powdered sugar, lime juice, and coconut extract, mixing until combined.
  8. Pipe the frosting onto the cooled cupcakes and garnish with coconut and lime zest.
