Instructions
- Preheat the oven to 350°F and line two 12-cup muffin tins with cupcake liners.
- In a large bowl, combine all the cupcake ingredients except for the coconut and mix on low for 30 seconds, then on high for 3 minutes.
- Add the coconut flakes and mix until just combined.
- Distribute the batter evenly among the cupcake liners.
- Bake for 16-22 minutes until lightly golden and a toothpick comes out clean.
- Allow the cupcakes to cool completely.
- For the frosting, beat the cream cheese and butter until fluffy, then add powdered sugar, lime juice, and coconut extract, mixing until combined.
- Pipe the frosting onto the cooled cupcakes and garnish with coconut and lime zest.
