Ingredients

  • 3 large eggs
  • ½ cup coconut oil
  • ½ cup agave nectar or honey
  • ½ cup coconut flour
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup unsweetened shredded coconut

Instructions

  1. Blend eggs, coconut oil, and agave nectar in a small bowl using a hand blender.
  2. Mix in coconut flour, salt, baking soda, and shredded coconut.
  3. Allow the batter to sit and thicken slightly.
  4. Line a muffin pan with paper baking cups.
  5. Spoon ¼ cup of cupcake batter into each cupcake liner.
  6. Bake at 350°F for 20-25 minutes.
  7. Remove cupcakes from the oven and let them cool for 20 minutes.
  8. Frost with Key Lime Icing and serve.
