Ingredients

The batter

  • ¼ cup liquified coconut oil
  • ½ cup honey
  • ½ cup apple sauce
  • ¼ to ½ tsp vanilla liquid stevia
  • 1 tsp sea salt
  • 10 units eggs

The dry ingredients

  • 1 cup sifted coconut flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp xanthan gum

Instructions

  1. Preheat the oven to 350°F.
  2. Beat the coconut oil, honey, apple sauce, vanilla liquid stevia, and sea salt together with an electric mixer.
  3. Add the eggs one at a time while continuing to beat the mixture.
  4. In a separate bowl, combine the coconut flour, baking powder, baking soda, and xanthan gum.
  5. Add the dry ingredients to the wet mixture and beat again until combined.
  6. Fill unbleached muffin cups nearly full with the batter.
  7. Bake in the preheated oven for about 24 minutes.
