Instructions
- Preheat the oven to 350°F.
- Beat the coconut oil, honey, apple sauce, vanilla liquid stevia, and sea salt together with an electric mixer.
- Add the eggs one at a time while continuing to beat the mixture.
- In a separate bowl, combine the coconut flour, baking powder, baking soda, and xanthan gum.
- Add the dry ingredients to the wet mixture and beat again until combined.
- Fill unbleached muffin cups nearly full with the batter.
- Bake in the preheated oven for about 24 minutes.
