Instructions
- Preheat the oven to 350°F.
- In a bowl, beat the liquified coconut oil, honey, apple sauce, vanilla stevia, and sea salt with an electric mixer.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, mix the coconut flour, baking powder, baking soda, and xanthan gum.
- Combine the dry ingredients with the wet mixture and beat again until well mixed.
- Fill unbleached muffin cups nearly full with the batter.
- Bake in the preheated oven for about 24 minutes.
