Instructions
- Preheat the oven to 350°F and prepare a 9-inch round cake pan.
- Sift together cake flour, baking powder, and baking soda; set aside.
- Process ½ cup of coconut until finely chopped and mix with the flour mixture.
- Combine buttermilk and 2 tablespoons of lime juice; set aside.
- Cream together butter, sugar, and lime zest until fluffy, then add eggs one at a time.
- Gradually mix in the flour mixture and buttermilk in alternating batches.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 40-45 minutes until golden and a skewer comes out clean.
- Cool slightly, then remove from the pan and discard parchment.
- Mix powdered sugar with the remaining lime juice, poke the cake, and pour the glaze over it.
- Sprinkle with the remaining coconut.
