Ingredients

The cake

  • 2 cups cake flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 cup sweetened, flaked coconut
  • 1 stick butter, softened
  • 1 ¼ cups granulated sugar
  • 1 tablespoon grated lime zest
  • 2 large eggs, at room temperature
  • ¾ cup buttermilk, at room temperature
  • 5 tablespoons lime juice

The glaze

  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F and prepare a 9-inch round cake pan.
  2. Sift together cake flour, baking powder, and baking soda; set aside.
  3. Process ½ cup of coconut until finely chopped and mix with the flour mixture.
  4. Combine buttermilk and 2 tablespoons of lime juice; set aside.
  5. Cream together butter, sugar, and lime zest until fluffy, then add eggs one at a time.
  6. Gradually mix in the flour mixture and buttermilk in alternating batches.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-45 minutes until golden and a skewer comes out clean.
  9. Cool slightly, then remove from the pan and discard parchment.
  10. Mix powdered sugar with the remaining lime juice, poke the cake, and pour the glaze over it.
  11. Sprinkle with the remaining coconut.
