The lime glaze

Instructions
- Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
- In a large bowl, whisk together flour, salt, and baking powder.
- In a small bowl, combine sugar and lime zest, then mix into the flour mixture.
- In a separate bowl, mix coconut milk, coconut oil, eggs, lime juice, and coconut extract.
- Combine wet and dry ingredients, then stir in ½ cup of coconut.
- Pour the batter into the prepared pan and sprinkle with remaining coconut.
- Bake for 60 minutes or until a toothpick comes out clean.
- Cool the loaf for 15 minutes, then remove from the pan and let cool completely.
- Prepare the lime glaze by whisking together powdered sugar and lime juice, then drizzle over the cooled loaf.
