Ingredients

The cake

  • cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup granulated sugar
  • 2 tablespoons lime zest
  • ¾ cup coconut milk
  • ½ cup coconut oil, melted and cooled
  • 2 large eggs, slightly beaten
  • 2 teaspoons fresh lime juice
  • ½ teaspoon coconut extract
  • ½ cup sweetened flaked coconut, plus 3 tablespoons, divided

The lime glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh lime juice

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
  2. In a large bowl, whisk together flour, salt, and baking powder.
  3. In a small bowl, combine sugar and lime zest, then mix into the flour mixture.
  4. In a separate bowl, mix coconut milk, coconut oil, eggs, lime juice, and coconut extract.
  5. Combine wet and dry ingredients, then stir in ½ cup of coconut.
  6. Pour the batter into the prepared pan and sprinkle with remaining coconut.
  7. Bake for 60 minutes or until a toothpick comes out clean.
  8. Cool the loaf for 15 minutes, then remove from the pan and let cool completely.
  9. Prepare the lime glaze by whisking together powdered sugar and lime juice, then drizzle over the cooled loaf.
