Ingredients

  • 1 unit steak
  • 1 tablespoon olive oil
  • to taste sea salt
  • to taste fresh ground pepper

Instructions

  1. Oil the grill grates well.
  2. Slather the steak with olive oil, sea salt, and fresh ground pepper.
  3. Place the steak on the indirect side of the grill and cook for a minimum of 3 minutes per side.
  4. For medium rare, remove the steak at an internal temperature of 120 degrees.
  5. Ensure the direct side of the grill is hot, with gas burners on high or charcoal vents wide open.
  6. Sear the steak on each side for 2 minutes.
  7. Let the steak rest tented under foil for 10 minutes.
