Instructions
- Oil the grill grates well.
- Slather the steak with olive oil, sea salt, and fresh ground pepper.
- Place the steak on the indirect side of the grill and cook for a minimum of 3 minutes per side.
- For medium rare, remove the steak at an internal temperature of 120 degrees.
- Ensure the direct side of the grill is hot, with gas burners on high or charcoal vents wide open.
- Sear the steak on each side for 2 minutes.
- Let the steak rest tented under foil for 10 minutes.
